Penn State Offers Pasteurizer Operators Workshop

UNIVERSITY PARK, Pa. -- Penn State's "Pasteurizer Operators Workshop" will be offered by the College of Agricultural Sciences' department of food science, in cooperation with the Pennsylvania Department of Agriculture (PDA), Nov. 5-7 at the Atherton Hotel in State College.

The three-day event includes hands-on activities, discussions and lectures on regulations, cleaning and sanitation, pasteurization, milk flavor and other operational procedures in milk plants. One day will be spent in Penn State's University Creamery using the latest short-time system available to see what occurs and why.

New to this year's program are sessions on UHT (ultra-high temperature) processing and processing milk for ESL (extended shelf-life), as well as a case study. The workshop features speakers from Penn State, PDA and equipment and supply companies. Hazardous Critical Control Points (HACCP) issues in food processing plants will be addressed. John Floros, head of Penn State's food science department, will present problem-solving techniques.

The $395 registration fee covers tuition, manual, breaks, a lunch and a banquet. Registrations will be accepted through Oct. 21. Walk-ins will be accepted as space allows.
