Penn State Offers Pasteurizer Operators Workshop
UNIVERSITY PARK, Pa. - Penn State's 2005 Pasteurizer Operators Workshop, offered by the College of Agricultural Sciences' department of food science in cooperation with the Pennsylvania Department of Agriculture, will be held Nov. 7-9 at the Atherton Hotel in State College.
The three-day event will include hands-on activities, as well as discussions and lectures on topics such as regulations, cleaning and sanitation, pasteurization and other operational procedures in milk plants. Participants will spend a day in Penn State's University Creamery using the latest short-time system available and observing what occurs and why.
The workshop will feature speakers from Penn State, the state Agriculture Department and equipment and supply companies. Sessions will cover the microbiology of milk and dairy products, general principles of heat transfer and HACCP (hazardous analysis at critical control points) concepts. John Floros, head of Penn State's food science department, will present a session on problem-solving techniques.
The $485 registration fee covers tuition, manual, breaks, a lunch and the banquet. Registrations will be accepted by mail or fax, and walk-ins will be accepted as space allows.
